Legend has it that Lapsang Souchong was created during the Qing Dynasty when the passage of armies delayed the annual drying of tea leaves in the Wuyi Mountains. In order to speed up the drying process, workers dried the leaves over fires made from local pine tress and thus a new tea was born. The finished result is a unique smoky flavor and aroma. Creative culinary uses for marinades and rubs have highlighted this tea as well.
