    Anji Bai Cha is actually a green tea despite its name. "Bai Cha" refers to the name of the cultivar of tea bushes this tea is made from. According to legend, an emperor in the Song Dynasty had written an entire chapter about a mysterious tea plant with white jade leaves. It wasn't until much later that tea masters and scholars realized he was talking about the ancient Bai Cha bushes found in Anji County of Zhejiang Provice in China. With its very short picking season and limited bushes to harvest from, this tea is considered a rare and precious tea. It produces a smooth brew with scents of roasted chestnuts.

    Steep 1 tsp of tea per 8 oz. of water for 3-4 minutes.
